If I'm being honest, I eat a lot of eggs for breakfast. Scrambled eggs, fried (or "bubble" as my friend calls them), in an omelette, poached, hard-boiled. I literally like them all.

But sometimes a girl has to turn it up a bit. And from my experience working with nutritionists, I know that not everyone has the same feeling for eggs as I do. In fact, one of the most common requests we get is for egg-free breakfast recipes.

These turkey sausage patties with a heap of lemon spinach to match are a great way to ensure that your morning is loaded with protein (AKA stays full and fueled) and sneaking into some veggies. This turkey sausage is pretty easy to whip up in the morning. You need to start with some ground turkey first. Ground turkey is a great protein option because it is very high in protein but low in fat. If you love sausage but want to keep your fat intake on the low end, this is a great option.

When you have the raw ground turkey in a bowl, add an egg (to help the meat hold together better), a finely diced onion, garlic, and spices like paprika, oregano, and ground sage. Using your hands, mix everything in the bowl to make sure that the spices are worked well into the meat.

Once everything is mixed well, shape the meat into about 2-inch patties. I find it easiest to take a handful of meat, roll it into a ball, and then smash it into a pie.

From there, all you have to do is cook them! Oil in a pan, pan over medium to high heat, sizzle these babies away until they're nice brown and completely cooked through. Take them out of the pan to cool.

Then it's spinach's turn to shine. Throw a couple of LARGE handfuls in the pan and let them wither. Squeeze the lemon over it and season as you like. And that's it.

    Minced turkey

    finely diced

  • 2
    olive oil
  • 1
    Baby spinach
  • Juice of 1 lemon
  • Sea salt and freshly ground pepper


  1. Mix the turkey, egg, onion, garlic, and seasonings in a mixing bowl and mix until well mixed. Shape into 2 inch breakfast patties.

  2. Heat the oil in a pan over medium heat and cook the sausage patties until brown and cooked through. Take out of the pan.

  3. Add the spinach and cook until wilted. Add the lemon juice.

  4. Serve the sausage with the spinach.
