Natural Hen Omelette

For most things in life, simpler is better. And this herb and chicken omelette is no exception. With fresh herbs of your choice, boiled chicken, and eggs, this omelette is packed with protein and flavor for the ultimate easy breakfast.

When most people start eating “healthy” a common complaint we may hear is that the food is so boring. Most of the time, this is because people are actually eating boring food. Cooked chicken and steamed vegetables are as bland as possible.

I always encourage these people to actually season their food. Crazy idea i know But spices – especially Trader Joe's – are a staple of your food. The same goes for fresh herbs. These powerful plants add such delicious flavor to any bland meal you prepare in the kitchen.

This omelette requires three eggs. Below are specific instructions for the best strategy to keep your omelette together in a pretty omelette shape. But if all else fails and you have scrambled eggs, that's perfectly fine. It's still edible and it will still taste so good!

Once you've set up your omelette base, you can top it with the chicken and fresh herbs. At this point, carefully fold half the eggs over the chicken to form your omelette. Leave it on the pan until fully heated.

When you've cooked a few chickens for a week, shred about half a cup and use that for this omelette. It's just as easy to use fried chicken for a super-quick breakfast.

As for herbs, you can use anything your heart desires. I like basil, but rosemary, parsley, and chives would be great too. If you have a small herb garden this is a great way to use your bounty.

Some goat cheese goes great with this omelette. A little hot sauce or avocado. As I said, this is a super easy breakfast option, but don't let that fool you. This could be your new favorite omelette recipe!

Herbal Chicken Omelette

A light omelette that is loaded with protein and flavored with fresh herbs. Use any herbs here to customize the taste.


  • 1
    Butter or olive oil
  • 3
  • 1/4
    freshly chopped herbs
    such as parsley, basil, chives or rosemary or a combination
  • 1/2
    cooked and shredded chicken breast
  • Sea salt and freshly ground pepper


  1. Heat the butter in a small pan over medium heat. Add the eggs and cook for a minute until the edges are firm. Carefully lift the edges and let the liquid flow under the edges. Season with salt and pepper. Scatter the herbs over the omelette, add the chicken and carefully fold in half. Keep cooking and serving
